Step-by-Step Brownie Preparation

To make your smooth and sweet brownies, you only need a few basic ingredients:

  • 5 eggs
  • 400 grams of caster sugar
  • 150 g PERU WHISPER chocolate drops 77%
  • 240 grams unsalted butter
  • 120 grams sifted flour
  • 200 g gariguette or wild strawberries
  • A pinch of salt.

Whip your eggs with your sugar while waiting for your chocolate and butter to melt at a low temperature. Fold the chocolate into your whitened eggs, taking care not to disturb the air you’ve incorporated. Use a pastry blender to add your flour one small spoon at a time before pouring it into a pan. To make sure your brownies don’t stick while they bake, use wax paper to grease the sides and bottom of your mould. Cut your wild strawberries into strips and arrange them on top of your pastry, then place your mixture into an oven preheated to 160 °C. If you’ve used individual moulds, your baking time shouldn’t exceed 20 minutes. If you’re using one large mould, you might need 40 minutes. You can test your mixture with a toothpick, but be careful not to overcook your brownies. They will continue to cool after being taken out the oven, so remove them when they’re still slightly underdone. Store your treats in an airtight container to keep them fresh and moist. You can keep them in the refrigerator to lengthen their shelf life or in the freezer for long-term storing.

Creating a Swirl Effect with Caramel or Peanut Butter

Feeling creative?

Use raspberries instead. Alternatively, microwave some peanut butter for 30 seconds. Mix in powdered sugar and whisk it until smooth. Now swirl the batter into your brownie batter gently with a knife.

You can use the same method with caramel, but you might want to reduce your sugar to compensate for the extra sweetness. Nuts are another popular option to enhance your recipe. We love cashews, pecans, and pistachios.

Understanding Brownie Types

Brownies can be broadly categorised as fudgy or cakey. Cakey recipes rise in the oven, while fudgy ones do not. They have a dense, sticky centre that’s downright delectable. This truly brings their chocolate flavour to the fore. The secret lies in the fat to flour ratio. The more flour, the more rise. The more fat, the denser your ultimate effect. Baking powder also gives your brownies a more airy texture.

Essential Ingredients for the Best Brownies

Choosing the Right Chocolate

The better your chocolate, the better the taste. Our recipe has thus replaced cocoa powder with Maison Pierre Marcolini’s exceptional single-origin chocolate tablets. The best brownie recipe with cocoa powder simply can’t compete with real premium chocolate.

Sugar and Its Impact on Texture

Granulated sugar can alter the consistency of your yield. It achieves a crispy crust and a more consistent texture. Powdered sugar will achieve a slightly softer crust and a chewier texture. Brown sugar is moist, so it will make your mixture fudgier.

Ultimate Chocolate Brownie Guide
The perfect brownie requires careful mixing and handling, but without the right ingredients, even the best techniques will be insufficient. Premium grand cru chocolate will provide premium flavour. Some say that’s all it takes, but some bakers swear by a tiny sprinkling of sea salt. Others insist that the right butter is all it takes. We have a great recipe that includes all these elements and more.

Troubleshooting Common Brownie Issues

Why Are My Brownies Too Dry ?

Excessive flour and overbaking can both cause dryness. You should take your brownies out of the oven when a toothpick still draws crumbs.

How to Achieve a Shiny, Crackly Top

A glossy top is the hallmark of exceptional brownie creation. Dissolving your sugar thoroughly into your batter will help, particularly if you use hot butter. Dissolving your sugar into your eggs might also work for you.

Creative Serving Suggestions

Brownies are often served with berries, gold leaf, and nuts. If you want to do something truly revolutionary, serve yours with shredded halva or drizzle them with cheesecake batter.

Brownies’ flavour variations are virtually infinite. Some brownies are iced and some are sprinkled with nuts. Some use dark chocolate, and others light. Discover our full collection of chocolate tablets to be used on the recipe. Some incorporate biscuit while others don’t involve chocolate at all, visit our collection of tender biscuits. Chocolate is, however, at the heart of almost every recipe, so keep Maison Pierre Marcolini’s exceptional treats on hand.
