Maison Pierre Marcolini, the commitment of a true master chocolatier
La Maison Pierre Marcolini is committed to reviving the true craft of master chocolatier and to valuing the terroir and the work of cocoa planters at a fair price.
As such, the transformation of the cocoa bean is carried out in Maison Pierre Marcolini's Belgian workshop. After analyzing each batch of dried beans directly sourced from plantations selected for their exceptional production, the roasting process begins.
This craftsmanship is unique to each chocolatier; Pierre Marcolini is accustomed to saying, "Roasting is putting one's soul into the chocolate."
Finally, after removing the bean from its skin and adding a bit of sugar, the bean is ground and conched. The resulting liquid chocolate will be used to create all the Maison's delicacies: truffles, chocolate bars, and ganaches.
