Behind every creation in the spring-summer 2026 collection lies a story. A journey, an encounter, a producer met along the seasons. Since the late 1990s, Pierre Marcolini has been travelling Japan with the same exacting standards he brings to selecting his cacaos: understanding where an ingredient comes from, who cultivates it, and why it is unique.

Sanpuku Nori — When the Ocean Becomes an Aroma
In Saga, on the island of Kyushu, Mr Kawahara cultivates one of the most renowned nori seaweeds in Japan. This is no geographical coincidence: it is the water and the mineral quality of the marine environment in this region that give these seaweeds their briny character and delicacy. "The aromas are not artificial — nature gives them to us", confirms Pierre Marcolini after their meeting. In the Hazelnut & Nori Pralié, this marine intensity serves as a counterpoint to the roundness of the praline — an unexpected yet deeply Japanese alliance.
The Kumada Family’s Hojicha — the Tea That Resembles Chocolate
The Kumada family cultivates in Kagoshima a hojicha whose roasted, almost smoky notes bear a striking resemblance to fine single-origin chocolates. "Their hojicha is unique in the world", confides Pierre Marcolini. It is this singular roasted quality that can be found in the Hojicha, Cashew & Yuzu Ganache: a lingering warmth, between gentle heat and vegetal softness.
The Bando Family’s Sudachi — the Citrus That Surprises
Less well-known than yuzu, sudachi is a small green citrus fruit cultivated in Tokushima, on the island of Shikoku. Its vibrancy is almost crystalline. Pierre Marcolini has built a strong relationship with the Bando family, producers of this rare variety: "I love its liveliness, its unique flavour and the element of surprise it brings." This sharp, precise character is at the heart of the Sudachi Ganache — an experience of pure freshness, worlds apart from conventional citrus fruits.
White Koji Miso — Umami in Patisserie
White miso is perhaps the most surprising ingredient in this collection. Fermented with koji — the ancestral fungus at the heart of Japanese cuisine — it brings a subtle umami depth, gently roasted notes and a remarkable creaminess. In the Hazelnut–White Miso macaron, it enters into dialogue with Piedmont hazelnuts and a blond sesame pralié to create a balance that is at once familiar and unexpected.
Yuzu, grown mainly in the Kochi region, offers a unique aromatic tension: floral, acidic, luminous. It runs through the entire collection as a connecting thread — in the ganache, the Mango-Yuzu macaron and the ice creams. Kinako, roasted soy flour used for centuries in Japanese patisserie, brings a warm, caramelised roundness. In the pistachio & Kinako praliné, two types of sweetness, two cultures, one shared sensitivity for roasted fruit.

What unites all these ingredients is the same conviction that has guided Pierre Marcolini from the very beginning: the quality of a creation is decided first and foremost at its source. Sanpuku nori from Mr Kawahara in Saga, the Kumada family’s hojicha in Kagoshima, the Bando family’s sudachi in Tokushima: behind every flavour, a name, a family, a shared commitment to excellence.
