Bean to Bar Chocolate
At Pierre Marcolini, our cocoa beans are directly roasted in the workshop. This allows us to develop unique flavors in the world. The first step is to select the beans.
Pierre Marcolini travels to all corners of the world every year to visit the planters and select the best cocoa beans. The beans are then enhanced by meticulous and rigorous roasting work. This step helps reveal smoky, tangy, or floral notes depending on the type of bean and roasting temperature.
Passionate artisans
This new Découverte Collection is the result of many months of research and development. It all begins with the search for inspiration: a journey, an ingredient, or a discussion can be the starting point for new recipes. Pierre Marcolini, accompanied by his R&D (Research and Development) team, then works on bringing these ideas to life.
Ingredient pairings, new technical feats, and new compositions are developed. Once the recipes are validated and selected, it's time for production to take over. All chocolates are handcrafted in our Brussels workshop.

Our chocolate creations are reinvented with double textures of indulgent pralines, ganaches, and caramels. Surprising flavors of flowers, fruits, teas, and spices will introduce you to a new range of flavors, all stemming from the innovative work of our workshop, such as matcha tea, yuzu hazelnut, or blackcurrant-tonka.

Grands Crus
Are you already familiar with our Grand Cru chocolates? These have been completely reimagined: new shapes and flavors are joining our selection. Sourced from Cuba, Peru, Sao Tome, Madagascar, and India, our cocoa beans are roasted directly in the workshop.
Our ganaches are prepared, infused, or flavored, revealing smoky, tangy, or floral notes.
The result is the product of extensive development work within our workshop to best enhance the cocoa beans and their specificities. The perfect gift box for all dark chocolate enthusiasts!
