The Japanese tea ceremony also called “Chanoyu” is always accompanied by a delicate pastry. Pierre Marcolini pays homage to the land of the rising sun with this Earl Grey cake topped with a creamy yuzu-matcha tea ganache. The Maison cake, which uses rice flour, comes in a new longer format that’s easy to slice.
