Venezuela, Ecuador, the Caribbean and Madagascar.
Pierre Marcolini is one of the few chocolatiers working today who roasts his cocoa beans in-house, ensuring he maintains a unique chocolate flavour. “Cocoa beans differ in character as much as grape varieties do. There are subtleties that can only be spotted on the ground when I visit plantations in Ecuador, Cuba or Peru.”
Pierre Marcolini is a pioneer of the idea that cocoa – like wine – deserves first-growth status out of respect for its origins.
